Not Your Average Popcorn
Inspired by Cook This Book – Molly Baz
Wine pairing – 2022 Hello Sunday bubbles
Why does this recipe work with our Hello Sunday?
You may have heard before that popcorn is the ultimate foil for Champagne. Well this isn’t your typical bubbles, and this popcorn isn’t your average snack. Hello Sunday has loads of fruit on the palate such as strawberries and raspberries and a hint of sweetness. To compliment it, this popcorn is savoury, salty, and packed with umami flavours that help balance the sweetness in the wine. Bubbles are fun to drink, and what is more fun than movie style popcorn?

Now on to the recipe:
Makes 10 cups (~10 minute cook time)
4 T Unsalted butter
¼ C Neutral oil (like canola or vegetable)
½ C Popcorn kernels
1 ½ t Salt
1 t Turmeric
2 T Nutritional Yeast Flakes
+ Salt & Pepper
Heat the oil in a large pot over medium heat until shimmering. Add the butter, popcorn, salt, and turmeric and swirl the pot evenly to coat the kernels in the oil and butter as it melts.
Once the butter has melted, cover the pot with a tight-fitting lid and cook, shaking the pot occasionally while still covered, until there are 3-second-long pauses between pops (~5-6 minutes). Remove pot from heat and let sit with the lid slightly cracked for 1 minute to release steam and allow any stragglers to finish popping.
Transfer the popcorn to a large bowl. Sprinkle with nutritional yeast flakes and season with lots of black pepper, tossing and stirring until all the popcorn is well coated. Taste for seasoning and adjust if needed.

Follow the above recipe and continue below:
Nacho Popcorn
+ Olive Oil
+ Aleppo chilli powder or crush red chilli flakes
+ Garlic powder
+ MSG (optional)
There are no measurements listed for these spices as it is kind of a choose your own adventure type deal. Splash some olive oil on the popped corn to give the spices something to adhere. Sprinkle the chilli and garlic powder and mix the popcorn well and taste. Adjust to your liking. MSG is a flavour enhancer, but it is totally optional in this recipe.
